HAPPY NEW YEAR!!

Isn't life grand? Eat all the holiday goodies, then starve oneself to lose the extra jelly (oops! I mean belly) roll...

I have a great Easy Healthy Recipe, that I will share with you. It is filling and tastes wonderful!

Impossible Salmon & Asparagus Pie

Ingredients:
1 lb. fresh asparagus, cut into 1 inch pieces (2 cups)
4 medium green onions, sliced (1/4 cup)
1 1/2 cups shredded Swiss Cheese (6 oz)
1 can (6 oz.) skinless boneless pink salmon, drained
1/2 cup Bisquick or Pioneer Mix
1 cup milk
1 1/2 tsp chopped fresh or 1/2 tsp dried basil leaves
1/8 tsp pepper
2 eggs

Fix:

Heat oven to 400 degrees.

Pam a deep dish pie plate (glass is best)

Sprinkle asparagus, onions, 3/4 cup of the cheese and the salmon into the plate.

Stir remaining ingredients until blended. Pour over the mixture in the pie plate.

Bake 30 - 35 mins until done in center. It usually takes a little longer (especially if you add extra cheese).

When done, sprinkle with remaining 3/4 cup cheese. Bake about 2 more minutes until the cheese is melted.

Let stand a few minutes, eat and enjoy!!!!

This makes 8 servings.

You can exchange the veggies to broccoli and use ham, that is good too. Use approx. the same amounts.

Kids even like this. Kind of a faux quiche!

BTW, I tried the Salmon Impossible Pie, it was good!!
